Vinification: Partial destemming of the grapes. Fermentation temperature controlled at 16°C. Aging in small stainless steel vats
Sensations: Pale gold color with greenish reflections. Shiny appearance. A beautiful intensity on the nose evoking ripe green apple evolving towards citrus notes such as grapefruit and orange. Frank attack on the palate revealing aromas of apple and medlar with a nice minerality on the finish.
Pairings: Serve with eel in parsley and lobster
