Blend of the PN TX20 edition: 100% Pinot Noir (Blanc de Noirs).

Main growth: Tauxières, associated with other villages (Avenay, Verzenay).

Maturation: A maturation time in the cellar more than twice as long as the rules of the Appellation

Dosage: Very low, 4 grams per liter

Sensations: To the eye: a robe with subtle golden reflections. On the nose: notes of dried flowers, to which are added aromas of tobacco and mocha. Licorice and dried fruits complete this evolved, discreet and complex nose. On the palate: a very fruity and lively facet with notes of cooked apricot, peach, exotic fruits followed by flavors of acacia honey, fresh nuts and spices. A nice salinity complements the acidity of this wine. A finish of red fruits, crème de cassis and surprising notes of citrus peel. A lively, straightforward wine, very clean and in contrast with the nose.

Pairings: Millefeuille of Ardennes tomme, confit of tonka bean chutney Roasted quail, dried apricots and honey lemon sauce. Chaource cheese.
