Blend: 100% Pinot Noir Grand cru (Blanc de Noirs). Exclusive use of the cuvée. Fermentation carried out entirely in barrels. Only very high quality harvests are vintage at Bollinger.
Maturation: a maturation time in the cellar more than twice as long as the rules of the appellation. The maturation is done under a cork stopper.
Dosage: low, 4 grams per liter
Sensations: To the eye: a deep gold color. On the nose: complex, racy and melted. Intense aromas of quince paste, mirabelle plum and dried fruits give way to subtle notes of mocha and toast. On the palate: a very broad aromatic spectrum is expressed in a greedy, rich and precise palate. Remarkably persistent, it is marked by a saline finish.
Pairings: White caviar; the Alba truffle.
